Blackened food was popularized by Chef Paul Prudhomme in the 1980’s and is as much a flavor as it is a cooking technique. The flavor is a fusion of Cajun, Creole, and Southern cuisines while the technique involves dipping the food item in melted butter, dredging it in the spice blend, and then cooking it in a very hot skillet creating a very dark brown/black crust which gives Blackened foods their name.
