Description: Chipotle Chiles start life as Jalapeños that are harvested at the end of the growing season once they have fully ripened and turned red. The ripe Jalapeños are then smoked over a wood fire until dried before being sold either whole, or more commonly ground which results in a unique, earthy, smoky spice with a mild to medium level of spice.
